Cherry Pie



2 cups Everclear

2 – 32 oz. Tart Cherry Juice

2 – 15 oz. cans of Dark Cherries in Heavy Syrup

1 1/2 cups sugar

1 Tsp. Almond Extract or Vanilla



In a big pot bring Cherry Juice, Cherries and Sugar to a boil

Turn heat down and simmer for 30 minutes, stirring occasionally

Take off of heat and let cool to room temperature

Now pour in the Everclear and the Vanilla or Almond Extract

Strain this mixture — reserving cherries

Fill mason jars with the Cherry Juice leaving room for some cherries

Divide the cherries into the jars as evenly as you can

You can serve this now or seal the jars and leave sit for a couple of weeks in a cool/dry place or in your refrigerator

This will make about 3 1/2 quarts

Pour into glass over ice

Optional – Add 7-Up, Sprite or Soda Water if you like your drink bubbly and not quite so strong. ENJOY !!!
